About 50 beefalo roam the 75 plus acres of Lick Springs Farm, managed by Hal and Joyce Davis. Beefalo are a cross between 3/8ths bison (American buffalo) and 5/8ths domestic cattle which produces meat that is low in fat and cholesterol. Lick Springs' beefalo are 100% grass-fed, added hormone- and antibiotic-free, and pasture raised start to finish. Organic guidelines and practices are employed.
What is a Beefalo: A Beefalo is a cross between a bison and a beef breed. This ensures a meat that is low in cholesterol, low in fat and high in protein. A full-blood Beefalo is a breed that is 3/8 buffalo and 5/8 any other beef breed. Beefalo can be used in any beef recipe. Because Beefalo is a lean meat it will cook about 1/3 faster than most meat. Beefalo has a nice beef flavor. It does not have a "wild" or "gamey" taste.
